Here are some vegetarian recipes you can make at home:

Breakfast

Eggs and chips

Ingredients:

  • 200g Maris Piper potato diced
  • 1 x leek
  • 1 tbsp olive oil
  • 100g mushrooms
  • 2 x eggs

Method:

  1.  Add diced potato and leek to a non-stick baking tray and drizzle over oil. Heat 200 degrees for 30mins mixing half way
  2. Remove baking tray from oven and crack on top the two eggs before placing back in the oven for a further 3-4 minutes

Mozzarella sandwich

Vegetarian Recipes - Mozzarella Sandwich

Ingredients:

  • 2 x slices granary/seeded bread
  • ½ ball mozzarella cheese
  • 1 x tbsp sundried tomato
  • 4 x olives
  • Small handful basil leaves 

Method:

  1. Toast bread, then on top of one piece layer sliced mozzarella, sundried tomato, sliced olives and basil leaves with remaining sliced toast on top

Lunch

Halloumi rice salad

Ingredients:

  • 1 cup brown basmati rice 
  • 7g oregano leaves chopped
  • 3 tbsp olive oil
  • 150g halloumi slides
  • 100g cherry/plum tomato sliced
  • Handful olives chopped
  • 70g pesto

Method:

  1. Simmer rice in water until cooked. Whilst cooking chop ingredients
  2. Brush the sliced halloumi with oil and cook in non-stick frying pan 2 mins each side until golden
  3. Drain rice when cooked and combine all ingredients together in a bowl to serve

Spicy chickpea salad

Ingredients:

  • 1 cup chickpeas rinsed and drained
  • ¼ tsp ground cumin
  • 1 tbsp lime juice
  • 4 inches cucumber sliced
  • 2 x handful cherry/plum tomato chopped
  • ¼ red onion sliced
  • 1 tbsp olive oil

Method:

  1. Heat olive oil, chickpeas, and cumin in a saucepan until warm. Add lime juice
  2. Remove from heat and add remaining ingredients stirring well then serve

Dinner

Spicy sweet potato cakes and eggs

Vegetarian Recipes - Spicy Sweet Potato Cakes and Eggs

Ingredients:

  • 2 eggs
  • 25g harissa
  • 100g natural yoghurt
  • 250g sweet potato peeled and grated
  • 100g plain flour
  • 2 egg whites
  • 25g harissa
  • 1 tbsp olive oil

Method:

  1. Squeeze excess liquid out of grated sweet potato then add flour, egg whites, harissa mixing well than forming into 4 potato cakes
  2. Fry in frying pan with olive oil for 2-3 mins each side
  3. Poach eggs in another saucepan for 3-4 minutes
  4. Place one potato cake on plate and top with harissa and yoghurt than the other potato cake followed by poached egg on top

Roasted pepper and bean chilli

Vegetarian Recipes - Roasted Pepper and Bean Chilli

Ingredients:

  • ½ red onion sliced
  • 1 stick celery
  • 1 green pepper finely chopped
  • 1 tbsp olive oil
  • 460g jar of roasted pepper
  • 1 tbsp dried oregano
  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 400g tinned chopped tomato
  • 200g refried beans
  • 200g kidney beans rinsed and drained

Method:

  1. Fry in saucepan olive oil, onion, celery, peppers, herbs and spices until softened
  2. Add tomatoes, refried and kidney beans with ½ can water. Simmer for 45mins adding water occasionally if sauce becomes too thick
