Here are some gluten free recipes you can make at home:

Breakfast

Poached egg & avocado on toast

Ingredients:

  • 2 slices gluten free bread
  • 2 free range eggs
  • ½ avocado
  • ½ red onion or 1 spring onion
  • Sprinkle chilli flakes
  • 1 tbsp white wine vinegar

Method:

  1. Bring a saucepan of water to simmer then add vinegar. Carefully break eggs into liquid and simmer for 3 - 4 minutes
  2. Whilst eggs are simmering, mash avocado, finely chopped onion/spring onion, and chilli in a bowl and add bread to the toaster
  3. Add the avocado mix to the toast and top with eggs once cooked

Gluten free muesli

Ingredients:

  • 100g almonds
  • 50g brazil nuts
  • 50g pumpkin seeds
  • 20g flaxseed/chia seeds
  • 300g certified gluten free rolled oats
  • 50g desiccated coconut
  • 100g dried fruit
  • Milk or yoghurt to serve with fresh fruit

Method:

  1. Chop nuts and dried fruit into smaller pieces
  2. Combine all dry ingredients together and store in an airtight container
  3. Add milk or yoghurt and fresh fruit to muesli when ready to eat

Lunch

Tuna & cottage cheese jacket potato

Gluten free recipe - Cottage cheese & Tuna Jacket potato

Ingredients:

  • 1 jacket potato
  • 225g can tuna/small tin sardines
  • ½ red chilli (optional)
  • ¼ red onion
  • 6 cherry tomatoes
  • 150g cottage cheese

Method:

  1. Cook the jacket potato either in oven or microwave
  2. Whilst potato is cooking finely chop the chilli, onion and tomatoes and mix in a bowl with the tuna/sardines
  3. Cut the cooked potato in half adding vegetable mix and cottage cheese

Easy mackerel salad

Ingredients:

  • 50g green beans
  • 50g tender stem broccoli
  • Large handful spinach leaves
  • 1 mackerel fillet
  • 3 tsp sunflower/sesame/pumpkin seeds
  • 50ml natural yogurt
  • 1 tsp lemon juice
  • 1 tsp wholegrain mustard

Method:

  1. Simmer the beans and broccoli for 4 minutes
  2.  In a jar add yoghurt, lemon juice, mustard and shake well with lid on
  3. Mix cooked and cooled veg, spinach, flaked mackerel and yoghurt dressing

Dinner

Salmon & broccoli frittata

Gluten Free Recipes - Salmon & Broccoli Frittata

Ingredients:

  • 8 eggs
  • 500g new potatoes
  • 1 handful broccoli
  • 2 wild salmon fillets
  • 1 handful chopped mint leaves

Method:

  1. Chop the potatoes in half and boil for 5 minutes then add broccoli and cook for further 5 minutes until soft when pricked by a knife
  2. Bake salmon fillets in a 180-degree oven for 10 minutes or 2 minutes in microwave
  3. Add some olive oil to a frying pan and over high heat add sliced potatoes until edges are golden. Add flaked salmon and broccoli. Add in the mint and whisked eggs. Cook on low heat until sides of frittata are set but the centre is not set. Place under the grill for 2 minutes until top becomes golden colour

Roasted veg, feta and quinoa 

Gluten Free Recipes - Roasted Vegetables, Feta and Quinoa

Ingredients:

  • 1 red onion
  • 1 yellow pepper
  • 1 green pepper
  • 2 courgettes
  • 2 cloves garlic
  • 200g quinoa
  • 200g feta cheese

Method:

  1. Cook quinoa according to packet instructions
  2. Preheat oven to 200 degrees and add to baking tray diced peppers and onion drizzled with olive oil and cook for 15 minutes
  3. Add garlic and diced courgette to peppers and onion and cook together for further 15 minutes
  4. Combine roasted veg with cooked quinoa and crumbled/diced feta to serve
